Michael has extensive Michelin standard and Good Food Guide experience, including running his own restaurant in Malvern for 8 years. Michael uses totally fresh ingredients from local suppliers as much as possible, making everything in the galley from scratch.  His close rapport with local suppliers helps identify which produce is in season and at its best, often picking up fresh ingredients en route
